The Perfect Quick & Easy Summer Dessert Recipe

I think we can all agree that summer desserts should be light, refreshing, and served often. We recently caught up with scouted nutritionist Kristen Rowe to see how she tackles sweet cravings. Inspired by a peach picking adventure at Chiles Peach Orchard in Crozet, read on for her Lightened Up Peach Crisp recipe—perfect for your next summer soiree or, you know, Tuesday.


Lightened Up Peach Crisp


INGREDIENTS:
For the peach filling:
6 peaches
2 tablespoons maple syrup (optional)
2 teaspoons vanilla extract
½ lemon, juiced
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg

For the crumble:
1/2 cup rolled oats
1/2 cup whole wheat flour
1/2 cup pecans, chopped
1/2 teaspoon cinnamon
1-2 tablespoons milk
2 tablespoons maple syrup (optional)

INSTRUCTIONS:
Preheat the oven to 350 degrees. Chop the peaches and mix them in a bowl with the rest of the peach filling ingredients. Spread the peach filling in an 8×8 baking dish. Chop the pecans and mix them in a bowl with the rest of the crumble ingredients (use just enough milk to make the mixture “crumbly”, without being too wet or dry). Spread the crumble mixture on top of the peach filling in the baking dish. Bake for 30-40 minutes, or until it’s bubbling. Let cool for 10-15 minutes before serving.
